6 Chocolate Multi-grain crackers (2 ounces)
7 ozs cream cheese
10 ozs Skyr
1 ¼ ozs honey
½ organic lemon (shell)
2 Tbsps cocoa powder
24 ozs Whipped cream
3 ½ ozs white chocolate

Preparation steps

1.

Chop dark chocolate into pieces and melt over a hot water bath. Use the melted chocolate to drizzle fine lines into the ice cream molds. Finely crumble cookies, setting aside some for garnish.

Mix cream cheese with Skyr, honey, lemon zest and cocoa powder until smooth. Whip cream until stiff and fold in with cookie crumbs.

Pour mixture into molds and freeze for at least 4 hours, inserting wooden sticks after 1-2 hours.

Chop white chocolate into pieces and melt over a hot water bath. Remove from the molds and decorate with the melted chocolate and remaining cookie crumbs.
