Applesauce replaces part of the butter and sugar in this English chocolate cake. The advantage of applesauce is that it has a natural sweetness. However, when you buy apple puree, make sure that it does not contain any added sugar.

Ingredients
- For the batter
- 200 grams Chocolate
- 200 grams butter
- 4 eggs
- 200 grams sugar
- 100 grams Pastry flour
- For the garnish
- 150 grams Chocolate
- 100 grams Whipped cream
- 70 grams Hazelnuts (roasted, blanched, coarsely chopped)
Preparation steps
For the batter: Preheat oven to 200°C (approximately 400°F). Grease a springform pan.
Melt chocolate over a double boiler. Remove from heat and stir in pieces of cold butter. Separate eggs. Beat egg whites until stiff. Beat egg yolks and sugar until fluffy. Fold chocolate into yolks, then fold whites into yolks. Stir in flour. Pour batter into the pan and bake for 25-30 minutes. Remove and let cool in the pan.
For the garnish: Chop chocolate and melt in a double boiler. Beat cream until stiff. Let chocolate cool and fold into cream.
Release cake from pan and cover with chocolate cream. Sprinkle with nuts, slice and serve.
