Chocolate Cookies with Nuts

Preheat oven to 350º F. Line baking sheets with parchment paper.
In a large bowl, beat egg whites and salt until stiff peaks form. Slowly add sugar and continue to beat, gradually add flour and ground hazelnuts. Stir in softened butter and mix thoroughly.
Spoon the dough mixture into a piping bag fitted with a plain tip. Pipe dough onto prepared baking sheets spacing about 2-inches apart. Bake for 10 to 12 minutes, or until golden brown. Cool on the baking sheet for about 5 minutes. Transfer to wire racks to cool completely.
Melt chocolate in the top of a double boiler or in the microwave. Brush the underside of half of the cookies with melted chocolate and sandwich two cookies together. Dust lightly with cocoa powder and confectioners' sugar. Serve.
