50 milliliters strong Espresso
200 grams Mascarpone
300 grams Quark
2 tablespoons Cognac
50 grams powdered sugar
150 grams Whipped cream
1 tablespoon cocoa powder

Preparation steps

Beat the eggs with the sugar until frothy. Fold in the flour, cocoa and espresso powder. Line the bottom of the springform pan with the parchment paper and pour the dough into the springform pan. Bake at 180°C (approximately 350°F) for 20 minutes. Let cool slightly and remove from the pan. Cool completely on a wire rack.

Place the cake ring around the cake. Melt half of the chocolate in the hot espresso and pour onto the cake. Mix the mascarpone, quark, cognac and powdered sugar. Beat the cream until stiff and fold in. Spread the cream on the cake. Dust the cake with cocoa powder and chill for 3 hours in the refrigerator.

Melt the remaining chocolate and spread thinnly on a work space. Use a spatula to scrape the chocolate into rolls. Decorate the cake with the chocolate rolls and rose petals. Cut into pieces and serve.
