Chocolate Chips and Quark Bread
For the dough, add the flour into a bowl and make a well in the middle. Crumble the yeast into the well, add 2 teaspoons sugar and mix with 5 tablespoons of milk and sprinkle with a little flour from the edges. Cover the flour and let rise in a warm place for about 15 minutes.
Add the softened butter, the well-drained quark, salt, eggs, vanilla sugar, the remaining sugar and the lemon zest to the flour. Knead well to a smooth dough. Add as much milk to form smooth and soft dough, but should not be sticky. Cover the dough with a tea towel and place in a warm place for about 30 minutes until the dough doubles in volume.
Knead the dough again well and quickly incorporate the chocolate chips. Divide the dough into about 15 pieces, shape each piece into balls and place on a baking tray lined with baking paper. Brush the dough balls with cream and cut crosswise.
Bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for about 20 minutes until golden brown.
