Chocolate Chip Muffins
Preheat the oven to 180°C (approximately 350°F).
Peel bananas and mash finely with a fork. Mix the flour with the oats, cinnamon, baking powder and baking soda. In a large bowl, whisk together the egg, sugar, vegetable oil, bananas and buttermilk. Add the flour mixture to the egg mixture and stir just until the dry ingredients are moist. Stir in chocolate chips.
Line the muffin tin with paper liners. Pour batter into the paper liners.
Bake muffins in the oven about 25 minutes. After baking let muffins cool for about 5 minutes in the muffin tin. Remove from tin and let cool completely before serving.
