Preparation steps

1.
Heat the oven to 230°C (210°C in a fan oven), 450°F, gas 8. Grease the financier moulds well with butter.

Melt the butter over a moderate heat until it browns slightly (beurre noisette). It may foam a little. Leave to cool to room temperature.

In a large mixing bowl, whisk the egg whites to soft mounds. Mix together the sieved sugar, almonds, sieved flour and lemon zest. Add to the egg whites, together with the butter, and fold in carefully. Fold in the chocolate and spoon the mixture into the prepared moulds. Smooth flat.
4.
Bake in the oven for 5 minutes, then turn the heat down to 200°C (180°C in a fan oven), 400°F, gas 6 and cook for a further 5 minutes. Turn off the oven and leave the cakes for a further 5 minutes before removing from the oven.
5.
Allow the cakes to cool slightly then carefully remove from the moulds and leave to cool completely.
