For the dough
320 grams Pastry flour
150 grams sugar
1 pinch salt
3 tablespoons cocoa powder
250 grams butter
1 egg

500 grams Quark
250 grams Mascarpone
4 eggs
2 tablespoons Vanilla sugar
150 grams sugar
3 tablespoons cornstarch

Preparation steps

For the dough, mix flour with sugar, salt, cocoa, butter (cut into small pieces) and egg in a bowl. Knead using the dough hook of a hand mixer into a smooth dough. Shape into a ball, wrap in plastic wrap and chill for 30 minutes.

Knead dough again briefly and place 1/3 aside. Roll out remaining 2/3 into the size and shape of pan. Line pan with parchment paper, pushing up sides to form an edge. Preheat oven to 180°C (approximately 350°F).

For the filling, mix quark and mascarpone until smooth. Separate eggs and mix yolks with vanilla sugar, sugar and cornstarch. Stir into quark mixture. Beat egg whites until stiff and fold into filling. Pour filling over dough and smooth.

Pick apart remaining dough, making small chunks. Sprinkle over filling and bake for 50-60 minutes. Cool in pan, remove, slice and serve.
