The chocolate slices with cherries have a lot to offer: Protein from the curd and yoghurt make for strong muscles. Folic acid from the sour cherries support blood formation, while fibre from the wholemeal flour saturates the body and ensures a healthy intestinal flora. Nevertheless, we should only enjoy a piece of it, because it also contains sugar, which can promote obesity, diabetes, caries and many other diseases.

If you want to prepare the chocolate slices vegetarian, you can also use agar agar instead of gelatine for the cream. Alternatively, you can drain 750 grams of quark well and mix it with only 250 grams of yoghurt. Then fold in the cream as in the recipe and spread directly on the cake base. However, this does not make the cream firm to cut.


For the base
6 eggs
1 pinch salt
150 grams sugar
175 grams Pastry flour
2 teaspoons Baking powder
4 tablespoons cocoa powder
For the filling
1 jar Sour cherry (350 grams, approximately 12 ounces, drained)
5 sheets gelatin
500 grams Quark
500 grams Yogurt (0.1% fat)
2 tablespoons lemon juice
100 grams powdered sugar
2 tablespoons Vanilla sugar
200 milliliters Whipped cream

Preparation steps


Preheat oven to 180°C (approximately 350°F). Line baking sheet with parchment paper.


For the base, separate eggs. Beat egg whites with salt until stiff. Sprinke with sugar and beat again. Mix flour with baking powder and cocoa. Beat egg yolks. Alternately mix in egg yolks and dry ingredients into egg white mixture. Place batter on baking dish and smooth. Bake for about 25 minutes or until a toothpick inserted in center comes out cean. Remove and let cool on baking sheet.


For the filling, drain cherries and reserve 4-5 tablespoons of juice. Drizzle cake with juice. Soften gelatin in cold water. Mix quark with yogurt, lemon juice, powdered sugar and vanilla sugar until creamy. Beat heavy cream until stiff and fold into mixture. Squeeze gelatin and heat in a small saucepan to melt. Stir in 4-5 tablespoons of filling mixture and then pour back into filling mixture. Pour filling onto cake base and smooth. Top with cherries and refrigerate for at least 3 hours.


Serve in small pieces.
