Preparation steps

Preheat the oven to 180°C (approximately 350°F) convection. For the cake: Separate the eggs and beat the egg yolks until frothy with 1/2 of the sugar. Whip the egg whites with a pinch of salt until foamy, sprinkling in the remaining sugar. Continue beating until stiff and glossy. Fold into the egg yolk mixture, sift the flour over the batter and then fold in. Grease a star shaped baking pan, fill with batter and bake for 30 minutes, until a toothpick inserted in the center comes out clean. Remove from the oven, let cool briefly then remove from the mold and let cool completely.

Cut the cake in half horizontally. Spread the warm jam over the bottom layer, add the top layer and press down gently. Chop the chocolate coarsely and melt over a hot water bath. Coat the cake with the chocolate, let dry and then decorate with chocolate shavings and sugar stars (recipe follows). For the sugar stars: Bring the sugar and 2-3 tablespoons water to a boil and cook until caramelized. Transfer to star-shaped butter or ice cube molds, let set and then remove from the molds.
