Preparation steps

Melt the butter and chocolate over a hot water bath. Separate the eggs. Beat the egg yolks with 50 grams (approximately 1.75 oz) of powdered sugar until fluffy. Mix with the melted chocolate. Carefully fold in the flour and almonds. Mix in the orange juice. Whisk the egg whites with the remaining powdered sugar until stiff. Carefully fold the egg whites into the chocolate mixture. Line a springform pan with parchment paper and pour in the batter. Bake for about 50 minutes at 180°C (approximately 350°F). Let cool before removing from the pan.

Heat the chocolate, double cream and liqueur over a hot water bath. Beat together. Freeze for about 2 hours. Coat the cooled cake with the chocolate cream. Garnish with chocolate chips and raspberries. Serve cold.
