In contrast to white flour, wholemeal flour contains a lot of fibre and scores with B vitamins and minerals. Dark chocolate provides many antioxidants that protect the body's cells from damage by free radicals. Beetroot gives the chocolate cake a slightly earthy flavour, which perfectly complements the chocolate taste. The deep red tuber also provides folic acid and iron, a good combination for blood formation.

For some crunch you can add 1 handful of roughly chopped walnuts or almonds to the dough. This also provides cell-protecting vitamin E and healthy unsaturated fatty acids. Beetroot can also be used in cooked and vacuum form.

½ teaspoon ground cinnamon
250 grams Pastry flour
1 teaspoon Baking powder
1 tablespoon cocoa powder (10 grams)

Preparation steps

1.

Chop chocolate coarsely. Combine chocolate and 100 grams (approximately 3 1/2 ounces) of butter and melt gently melt in a pot, let cool.

Whisk eggs with sugar, vanilla sugar, 1 pinch of salt and cinnamon until fluffy. Add chocolate mixture gradually and whisk until creamy.

Mix 250 grams (approximately 9 ounces) of flour with baking powder, sift over chocolate mixture and mix well.

Butter springform pan (24 cm in diameter) (approximately 10 inches) with remaining butter and sprinkle with remaining flour. Add batter and smooth. Bake in preheated oven at 200°C (fan oven 180°C; gas mark 3) (approximately 400°F) for about 45 minutes (inserted toothpick should come out clean).

Remove cake from the oven and let cool until warm. Transfer to a cake plate and dust with cocoa powder. Serve.
