180 grams Pastry flour
30 grams Cocoa
125 grams butter
1 egg
1 pinch salt

Parchment paper (and dried legumes; for blind baking)
500 grams Whipped cream (min. 30% fat)
4 centiliters raspberry Brandy
200 grams Dark couverture chocolate
250 grams Milk chocolate couveture
75 grams butter
50 grams Milk chocolate shavings
200 grams mixed Berry (earthworks, bromine, raspberries and blueberries)

Preparation steps

Mix the flour and cocoa. Place on the work surface and form a well in the center. Chop the butter into pieces and place in the well. Add the egg and salt. Quickly knead into a smooth dough. If necessary, add a little cold water or flour. Wrap in plastic wrap and chill for 30 minutes.

Preheat the oven to 180°C (approximately 350°F).

Roll the dough onto a floured surface. Grease the pan with butter. Place the dough onto the pan and form an edge. Cover with parchment paper and cover with the legumes. Blind bake for about 20 minutes. Remove from the oven, remove the parchment paper with the legumes and leave to cool. Remove from the pan.

Boil the cream and raspberry liqeuer and set aside. Chop the chocolates and place in a bowl. Stir in the hot cream and beat until a smooth chocolate mousse forms. Melt the butter and stir into the mixture. Spread the mixture on the pie crust and chill for at least 3 hours.

Before serving, sprinkle with grated chocolate and garnish with berries.
