Chocolate and Strawberry Cake
Strawberries not only sweeten our early summer, but also have a lot to offer in terms of health: Certain aromatic substances from the red fruit can have a cancer-preventing effect. Strawberries also score points with immune-boosting vitamin C and the mineral iron, which is beneficial in cases of anaemia, among other things.
Depending on the season, you can also prepare the cake with other soft fruits - how about fresh blueberries or raspberries, for example?
- 4 eggs
- 100 grams sugar
- 1 tablespoon Vanilla sugar
- 80 grams Pastry flour
- 2 tablespoons cocoa powder
- 40 grams cornstarch
Line the bottom of a springform pan with parchment paper. Preheat oven to 180°C (approximately 350°F).
Separate the eggs. Beat the yolk with half the sugar and the vanilla sugar until creamy.
Beat the egg white until stiff and sprinkle over the remaining sugar. Lift the egg white with a mixing spoon into the egg yolk batter. Mix the flour with the cocoa and cornstarch and add to egg batter.
Pour batter into the springform pan, smooth the surface and bake in preheated oven for about 30 minutes (check level of cooking with a toothpick). Remove from oven and let cool slightly. Carefully cut in edges along springform pan with a thin knife and pounce the cake on a kitchen grill. Allow to cool. Cut into the cake twice horizontally to make 3 layers.
For the filling: Beat 400 ml of whipped cream until stiff. Rinse, clean and halve the strawberries. Crush the dark chocolate and melt over a hot water bath.
Brush the lower layer with a little chocolate, approximately 1/3 of the whipped cream and sprinkle half the strawberries. Coat the middle layer with chocolate, spread 1/3 of the whipped cream and sprinkle the remaining strawberries. Attach the top layer and press down gently. Add the remaining chocolate with 200 ml of the cream mix (slightly warm again if needed) and the remaining whipped cream. Coat the cake with the chocolate mixture and top with whole strawberries.
Chill at least 1 hour before cutting and serving.
