Preparation steps

1.
Line a cookie sheet (or cookie sheets) with baking parchment and heat the oven to 180C fan assisted / 200C / 400F / gas 6.

Crumble the marzipan with the sugar, vanilla seeds, egg and milk and whisk together until smooth.
3.
Sieve the flour and cocoa powder over the bowl and fold in to the marzipan mixture.
4.
Push the dough through a fine sieve and leave to rest for around 1 hour.

Place a ring on the baking parchment, spoon in around 2 tbsp of the dough and smooth. Remove the ring and repeat until all the dough is used up.

Bake for 6-7 minutes and immediately remove the dough circles carefully with a palate knife, place on a

work surface and let cool.
8.
To fill, whip the cream and liqueur stiffly and layer up with the chocolate circles. End with cream as the top layer, dust with cocoa powder and serve decorated with shaved chocolate.
