Ingredients

for 1 piece Springform pan of 26 cm ⌀
For the cake
250 grams dark Couverture
400 grams blanched almonds
50 grams Shortbread
10 Eggs
250 grams Sugar
250 grams softened Butter
2 centiliters Amaretto
for decorating
300 grams Dark couverture chocolate (for coating)
6 blanched almonds (for decoration)

Preparation steps

For the cake: chop chocolate, almonds and shortbread very finely. Separate eggs. Whisk egg yolks with sugar until fluffy. Add butter and mix thoroughly. Gradually add chocolate, almonds and shortbread. Stir in amaretto. Beat egg whites until stiff and fold into batter. Pour batter into buttered pan and bake in preheated oven at 180°C (approximately 350°F) for about 75 minutes.

Remove cake from the oven, cool slightly and transfer to a wire rack. Cool completely. Melt dark chocolate over hot water bath and coat cake with chocolate thickly. Garnish with almonds and chocolate shavings and let rest overnight before serving.
