Chilled Strawberry Cake
The summery dessert scores points with a lot of protein and a minimum fat content per portion - so you can enjoy it without regrets, even though you already consume half the daily requirement of vitamin C. The vitamin helps to tighten the connective tissue and improve stress management.
You can also prepare the dessert without gelatine. An alternative is Agar Agar, which is a gelling agent made from algae. You can find this product on the baking shelf in well-assorted supermarkets and organic food stores. Dosage and use can be found in the package instructions.

Rinse strawberries in a bowl of cold water, then gently pat dry.
Set 6 of the prettiest berries aside. Halve remaining berries, puree and pass through a fine sieve.
Rinse lemon in hot water, wipe dry and finely grate 1 teaspoon zest. Squeeze lemon half.
Soak the gelatin in cold water for about 5 minutes. Meanwhile, rinse a rectangular baking dish in cold water and line with plastic wrap, leaving about 5 cm (approximately 2-inch) overhang.
Arrange ladyfingers to cover bottom of the dish.
Heat softened gelatin in a small pot, stirring until it dissolves. One after another, add 2 tablespoons of strawberry puree and whisk thoroughly into the gelatin.
Pour the mixture into the remaining strawberry puree and mix with lemon zest and vanilla sugar. Mix in the cottage cheese with 2-3 tablespoons of lemon juice and season to taste with sweetener.
Spread cheese mixture into the dish and smooth. Chill until set, at least 3 hours (preferably overnight) in the refrigerator.
Lift strawberry cake out of dish using the plastic wrap. Cut cake into 6 equal pieces, arrange ladyfinger side up on a plate and sprinkle with powdered sugar. Cut the remaining strawberries into slices or quarters,. Garnish cake with strawberries and serve.
