This recipe is extremely low in calories but high in nutrients because of the vitamins and minerals that cucumbers and mint provide. It is a light, simple, and easy way to get a serving of vegetables. 

You can substitute sour cream for creme fraise or for a healthier version, use greek yogurt.

2 Cucumber (halved lengthways, deseeded and diced)
2 sprigs mint (leaves removed, some set aside to garnish)
¼ cup Crème fraiche
1 handful Ice
cup milk
lemon juice
Horseradish

Preparation steps

1.
Puree together the cucumber, mint leaves, crème fraîche and the ice cubes.
2.
Add the milk (or water if preferred) until the desired consistency is achieved.
3.
Season with salt, lemon juice, horseradish and ground black pepper.
4.
Transfer to glasses and serve garnished with mint.
