Chili Turkey Breast with Apple and Spinach
- For the turkey
- 500 grams turkey breasts
- For the marinade
- 2 Tbsps Ketchup
- 2 Tbsps soy sauce (light)
- 1 red chili pepper
- 1 tsp paprika (sweet)
- For the apple and spinach
- 2 Apple (tart)
- 1 Tbsp lemon juice
- 250 grams Spinach (fresh)
- salt
- freshly ground peppers
- 2 Tbsps clarified butter
- 150 milliliters Apple juice
- 150 milliliters Broth
For the turkey, cut meat into strips. For the marinade, rinse chili pepper, remove seeds and ribs and cut into thin rings. Mix all marinade ingredients together in a bowl. Add turkey to the bowl, mix well and let rest in a cool place for at least 30 minutes.
Rinse apples (peel if desired), cut in half, remove seeds, cut into wedges and sprinkle with lemon juice. Rinse spinach, trim and drain.
Remove meat from the marinade. Heat 1 tablespoon clarified butter in a large pan and fry meat on all sides for 3-4 minutes. Remove turkey from pan, wrap in aluminum foil and keep warm in a preheated oven at 80°C (approximately 150°F).
For the apples and spinach, fry apples in remaining butter for about 2 minutes. Deglaze pan with apple juice and broth, boil, add spinach, briefly saute and season with salt and pepper. Add turkey strips with roasting juice from the foil back into the pan and briefly fry. Serve immediately by arranging turkey, apples and spinach on warmed plates.
