1 Halve chile pepper lengthwise, remove the seeds, rinse and pat dry.
2 Rinse mint, shake dry, pluck leaves and cut into strips. Mix mint and chile with yogurt in a small bowl. Season with salt.
3 Rinse, wipe dry and cut cucumber with a peeler lengthwise into thin strips.
4 Squeeze juice from lime. Peel and pit avocado, cut the flesh into slices and place in a bowl. Drizzle with a little lime juice.
5 Mix cucumber with avocado and season with salt and pepper.
6 Spread the tortillas evenly with the yogurt mixture. Top with sliced chicken, avocado and cucumber and the sprouts, roll up and serve.
