Halve chile pepper lengthwise, remove the seeds, rinse and pat dry.
Rinse mint, shake dry, pluck leaves and cut into strips. Mix mint and chile with yogurt in a small bowl. Season with salt.
Rinse, wipe dry and cut cucumber with a peeler lengthwise into thin strips.
Squeeze juice from lime. Peel and pit avocado, cut the flesh into slices and place in a bowl. Drizzle with a little lime juice.
Mix cucumber with avocado and season with salt and pepper.
Spread the tortillas evenly with the yogurt mixture. Top with sliced chicken, avocado and cucumber and the sprouts, roll up and serve.
