Chicken Skewers with Pesto
Rinse the cucumber, cut off the ends and cut into thin slices. Peel the onion and cut into thin rings. Rinse the lemon in hot water and wipe dry. Finely grate the zest and squeeze the juice of 1 half. Arrange the cucumber slices with the onion rings and lemon zest on plates. Drizzle with lemon juice and 2 tablespoons oil. Season with salt and pepper and let marinate.
Meanwhile, for the pesto, rinse cilantro, shake dry and puree with the peeled clove of garlic and 4-5 tablespoons of olive oil. Season with lemon juice, salt and pepper.
Rinse the chicken, pat dry and cut into cubes. Thread on wooden skewers, brush with oil and season with salt and pepper. Cook in a hot grill pan (or on grill) for about 5 minutes, turning frequently. Cut the remaining lemon half into slices and place in the grill pan.
Garnish skewers with pesto and serve with salad and grilled lemon slices.
