8 fresh Chicken liver
1 shallot
1 carrot
1 stalk Celery
2 tablespoons parsley (finely chopped)
1 garlic
2 butter
5 tablespoons olive oil
125 milliliters dry white wine
salt
freshly ground peppers
2 lemon juice
1 tablespoon small Caper
1 teaspoon Anchovy paste
125 milliliters organic Beef broth
12 slices Italian white bread (or Ciabatta)
Celery (for garnish)

Preparation steps

Rinse chicken liver.

Peel shallots and chop finely.

Rinse celery and chop.

Melt butter in a pan, saute shallots until soft, then add liver and fry briefly, add wine, simmer until liquid is evaporated and season with salt and pepper. Add parsley, capers and pressed garlic and stir in 1 tablespoon lemon juice. Add broth and puree everything with an immersion blender. Then add anchovy paste, mix, let simmer over low heat for a few minutes and season to taste.

Place white bread slices on a baking sheet, Brush with olive oil and toast in a preheated 200°C (approximately 400°F) oven until golden brown. Remove toast from the oven, sprinkle with liver spread and serve garnished with celery leaves.
