250 grams Chicken liver
150 grams Chestnuts (vacuum packed, pre-cooked)
1 shallot
2 garlic cloves
4 Tbsps butter
½ tsp dried thyme
¼ tsp grated Lemon peel
50 milliliters dry white wine
1 Tbsp Cognac
salt
freshly ground peppers
Whole-grain baguette (to taste)
oregano (for garnish)

Preparation steps

Rinse the chicken livers and pat dry, trim the fat and dice. Finely chop the chestnuts. Peel the shallot and garlic and finely chop. Melt the butter in a pan and saute the shallot with the garlic until soft. Add the liver and saute for 2-3 minutes while stirring. Add the chestnuts, thyme, grated lemon peel and white wine. Simmer for about 10 minutes, stir in the cognac and season with salt and pepper. Puree in blender and refrigerate overnight.

Spread onto baguette slices and serve garnished with oregano sprigs.
