Preparation steps

1.
Mix together the shallot, mustard, egg and meat. Add enough crumbs to form a pliable mixture. Season with salt and ground black pepper and shape into four burgers. Fry in hot oil on all sides for 6-8 min.

Cut the buns in half and top with the rocket, avocado and tomato. Place the burgers on top.
3.
Mash the cheese with a fork and mix with the quark and the chives. Place a dollop on each burger, top with the other bun half and serve.
