Chia Mint Pudding with Strawberries

- 1 ¾ ozs Chia seeds
- 14 ozs Almond milk
- 2 ½ ozs mint (4 stem)
- 2 Tbsps Shelled pistachio
- 3 Tbsps Agave syrup
- 9 ozs Strawberries
Stir chia seeds into 12 ounces of almond milk and leave to swell in the refrigerator overnight.
The next day, wash mint, shake dry and pluck off leaves, setting aside 4 for garnish. Finely puree 1 tablespoon pistachios and mint leaves with remaining almond milk using a hand blender.
Stir pistachio-mint puree and agave syrup into the chia pudding. Wash and clean strawberries and cut one third into fine slices.
Puree another third of the strawberries and pass through a fine sieve as desired. Quarter remaining strawberries.
Fill 4 glasses with half of the chia pudding and line the glass wall with strawberry slices. Pour in remaining pudding and top each with strawberry puree. Chop remaining pistachios. Garnish chia pudding with chopped pistachios, mint leaves set aside and strawberry quarters.

Pistachios are rich in polyunsaturated fatty acids, which can have a positive effect on cholesterol levels. Chia seeds provide the body with a lot of iron, calcium and high-quality amino acids.
Even smarter
If you don't like it so sweet, feel free to reduce the agave syrup or omit it altogether.
