1 lemon (juiced)
50 grams Citric acid (can be found in the pharmacy)
1 ½ kilograms Cherries
1 Cinnamon stick

Preparation steps

1.

Bring 1.5 liters (approximately 1.5 quarts) of water to a boil with the sugar, and cook for 5 minutes. Remove from the heat, add the lemon juice and citric acid, and stir until dissolved. Rinse and pit the cherries, and add to the syrup. Gently crush the cherries with a potato masher.

Add the cinnamon stick, and infuse for 1-2 hours. Strain the syrup through a fine strainer. Bring the syrup to a boil, and pour into sterilized bottles. Seal tightly, and cool completely.
