Preparation steps

Melt 1-3/4 ounces butter in a pot. Separate 2 eggs (use egg whites for another use). Crumble yeast and dissolve in 1 tablespoon sugar and milk. Combine flour, butter (1 ounce), sugar, egg yolks, and egg in a bowl. Pour in yeast milk and knead to a smooth dough. Cover and let rise about 45 minutes.

Meanwhile, rinse cherries and remove pits. Boil 1-2/3 ounces water with 1-ounce sugar and caramelize. Add cherries into mixture, remove from heat and let cool.

Knead dough on a lightly floured surface and roll out to a rectangle about 8 x 12 inches. Mix remaining sugar with cloves, cinnamon and almonds. Sprinkle onto the dough and spread cherries on top. Roll up the dough from the long side, cut into 12 slices and place on a baking sheet lined with parchment paper. Cover and let rise another 15 minutes.

Melt remaining butter in a pot and brush over pastry. Bake in a preheated oven at 350°F for about 30 minutes. Let cool, dust with powdered sugar as desired and serve.
