For the dough
200 grams Marzipan
120 grams sugar
½ Vanilla bean
1 egg
100 milliliters Whipped cream
80 grams Pastry flour
For the filling
75 grams Marzipan
2 centiliters Cherry brandy
1 packet red Pie glaze
1 teaspoon sugar
0.13 liter Cabbage
250 grams pitted Cabbage
mint (for garnish)
powdered sugar (for dusting)

Preparation steps

For the dough: Combine marzipan, sugar, scraped vanilla seeds and egg. Stir in flour and let rest for 1 hour.

Line a baking sheet with parchment paper. Preheat the oven to 190°C (approximately 375°F). Thinly roll out dough into small circles, about 8 cm (approximately 3 inches) in diameter. Bake for 5-6 minutes until light brown. Remove from oven and immediately press dough circles into the dish mold. let rest for 2 minutes in the warm oven then remove from molds and let cool on a wire rack.

Use remaining dough to form leaves and stalks, as desired. Bake until light brown, remove and let cool.

For the filling: Crumble marzipan combine with kirsch and 1 tablespoon water. Pour into a piping bag and pipe into each shell.

Combine glaze, sugar and cherry juice. Boil cherry juice, stirring occasionally. Add cherries, remove from heat and allow mixture to cool slightly. Top shells with cherry mixture and garnish with mint.

Dust with powdered sugar and serve.
