Once you've mastered this simple muffin recipe feel free to subsitute the cherries for other berries, including blueberries or raspberries.
Rinse, dry and pit 5 ounces of cherries, chop coarsely. Rinse lime in hot water, pat dry, grate zest finely and squeeze the juice. Line muffin pan with paper muffin cups. Combine flour with baking powder.
Whisk butter with sugar, vanilla sugar and egg until creamy. Add lime zest, 2 tablespoons of lime juice and kefir. Add flour mixture and mix quickly. Fold in cherries. Fill paper cups up to 2/3 with batter.
Bake in preheated oven at 350°F for about 25-30 minutes or until golden brown. Brush muffins with remaining lime juice, cool briefly, and remove from the molds. Garnish with fresh cherries and serve.
