1 Sieve, 2 Bowls, 1 Wooden spoon, 1 deep bowl, 1 Fork, 1 Hand mixer, 1 Parchment paper, 1 Kitchen shears, 1 Springform pan (24 cm diameter), 1 Rubber spatula, 1 Wire rack, 1 Small bowl

Thaw frozen cherries, if using. Rinse and pit fresh cherries, then drain well. In a bowl, mix cherries with the cornstarch.

In another bowl, mix together flour, baking powder, 1 pinch of salt and cane sugar with a wooden spoon.

Separate 2 eggs. In a small bowl, beat the egg yolks, remaining 2 whole eggs and buttermilk with a fork. Briefly, but thoroughly, stir in the flour mixture.

Line bottom of a springform pan (24 cm diameter) (approximately 9 inches in diameter) with parchment paper. Pour in the batter and smooth with a rubber spatula.

Scatter cherries over batter and press lightly. Bake on middle rack of preheated oven at 180°C (fan 160°C, gas: mark 2-3) (approximately 350°F) until cake is golden and cherries are juicy, about 30 minutes.

Beat the egg whites with 1 pinch of salt using a hand mixer until stiff. Gradually beat in granulated sugar.

Spread the meringue over the torte and bake at same temperature until browned in spots, 12-15 minutes. Remove from oven, loosen side of pan and let torte cool slightly on a cooling rack before serving.
