150 grams Pastry flour
50 grams sugar
1 packet Vanilla sugar
1 egg white
65 grams cold butter
For the caramel topping
25 grams Maraschino cherry
50 grams butter
100 grams sugar
2 tablespoons honey
125 grams Whipped cream
400 grams Almond slivers
100 grams Dark couverture chocolate
powdered sugar (for dusting)

Preparation steps

For the base: Combine the flour, sugar, vanilla sugar, 2 tablespoons water, egg white and chopped butter and quickly knead until smooth. Shape into a ball, cover with plastic wrap and chill for about 1 hour in the refrigerator.

Roll the dough out between 2 sheets of parchment paper until about 3 mm (approximately 1/8 inch) thick and place on a baking sheet lined with parchment paper.

For the caramel topping: Chop the cherries. Melt the butter, sugar and honey in a large saucepan, stirring, until the mixture is slightly browned. Carefully add the cream and simmer for about 2 minutes. Add the almonds and cherries and simmer for 3 minutes over low heat, stirring. Spread over the base, smooth the surface and bake in a preheated oven (180°C) (approximately 350°F) for about 10-12 minutes. Remove from the oven. While still hot, cut into 1.5 x 5 cm (approximately 1/2 x 2 inch) pieces then let cool.
