600 grams Cherries
4 centiliters Cherry brandy
1 Orange
250 milliliters Red wine
4 centiliters white Port wine
60 grams sugar
1 Cinnamon stick
200 grams Ricotta cheese
1 tablespoon sugar
½ lemon (grated and peeled)
seeds of Vanilla bean

Preparation steps

Rinse the orange in hot water, dry, and thinly peel several pieces of the zest. Squeeze the juice from the orange. Remove the seeds from the cherries, and marinate in the cherry brandy and orange juice for 30 minutes. Bring the wine, port, sugar, and cinnamon to a boil. Boil until syrupy in consistency. Add the marinated cherries and the marinating liquid to the cooking liquid, and poach for 2-3 minutes.

Mix the ricotta, sugar, lemon zest, and vanilla.

Divide the compote into bowls, and serve with the ricotta cream.
