Ingredients

For the shortcrust
100 grams sugar
200 grams butter
300 grams Pastry flour
1 egg
Pastry flour (for the work surface)

For the topping
1 Vanilla bean
700 grams Sour cherry (from a jar)
300 grams Crème fraiche
500 grams Quark
1 tablespoon cornstarch
5 eggs
150 grams sugar
2 tablespoons breadcrumbs

Preparation steps

1.

For the shortcrust, mix all shortcrust ingredients together and quickly knead to a smooth dough. Wrap in plastic wrap and place in the refrigerator for about 30 minutes.

Preheat the oven to 180°C (approximately 350°F) convection. Grease a tart pan.

Roll out the dough on a floured work surface slightly larger than the pan, place in the greased pan and form an edge up the sides.

For the filling, slit vanilla bean lengthwise and scrape out the seeds. Drain cherries in a colander.

Mix crème fraîche with the quark, cornstarch, vanilla, eggs and sugar until smooth.

6.

Sprinkle the breadcrumbs over the dough and spread the quark mixture on it. Then distribute the cherries on top.

7.

Bake in preheated oven until golden brown, 50-60 minutes. If cake becomes too dark while baking, cover with aluminum foil. Remove from oven and let cool on a wire rack.

8.

Cut into pieces and serve.
