For the dough
200 grams butter
180 grams sugar
1 packet Vanilla sugar
1 organic lemon (zest)
2 tablespoons Whipped cream
4 eggs
250 grams Pastry flour
2 teaspoons Baking powder
1 pinch salt
also
40 grams butter
60 grams slivered almonds
40 grams sugar
800 grams Sour cherry (from a jar)
2 tablespoons Apricot jam
1 Springform pan (26 cm diameter)

Preparation steps

For the dough, mix butter with sugar, vanilla sugar, salt, lemon zest and cream until fluffy. Gradually add eggs and stir. Mix flour and baking powder together and sift into mixture. Grease a springform pan with butter and sprinkle with almonds and sugar. Drain sour cherries.

Pour 2/3 of dough into pan. Top with 3/4 of the cherries. Pour remaining dough on top and smooth. Bake in a preheated oven at 175°C (approximately 350F°) for 45 minutes. Cool for 15 minutes in pan and then cool on a wire rack. Simmer apricot jam for 2 minutes over low heat. Strain and brush onto cake. Top with remaining cherries. Slice and serve.
