For the dough
200 grams butter
180 grams sugar
1 packet Vanilla sugar
1 organic lemon (zested)
2 tablespoons Whipped cream
4 eggs
250 grams Pastry flour
2 teaspoons Baking powder
1 pinch salt
400 grams Sour cherry (pitted)
In addition
butter (for the pan)
powdered sugar (for dusting)
Lemon balm (for garnishing)

Preparation steps

1.

Whisk softened butter with sugar, vanilla sugar, salt, lemon zest and cream until fluffy. Gradually add eggs. Combine flour with baking powder and stir into egg mixture. Butter springform pan. 

2.

Spread batter in a pan and arrange cherries on top. Bake in preheated oven at 175°C (approximately 350°F) for about 45-50 minutes. Remove from the oven and cool for 15 minutes. Loosen from the pan and cool completely on a wire rack. Dust cake with powdered sugar, slice and serve garnished with lemon balm leaves.
