The Turkish honey will keep for up to four weeks if kept in an airtight container in a dark place.

Preparation steps

1.
Line a shallow dish with grease-proof paper.
2.
Place the sugar and the cardamon pod in 175 ml water and bring to the boil. Stirring constantly, simmer on a low heat for around 15 minutes until the mixture takes on a syrupy consistency. Make sure that the sugar doesn't turn brown and caramelise.
3.
Remove the cardamom pod and take the pan off the heat. Beat the egg whites until stiff and quickly stir into the syrup. Add the hazelnuts, cherries and cinnamon and pour the mixture into the prepared dish.
4.
Leave to cool and harden for approx. 1 hour. Then knock it out of the dish and remove the paper. Cut into pieces and serve dusted with icing sugar.
