For the batter
180 grams butter
200 grams sugar
1 packet Vanilla sugar
6 eggs
40 grams cocoa powder
50 grams cornstarch
100 grams ground almonds
For the filling
5 sheets white gelatin
1 jar Sour cherry
4 tablespoons Cherry jam
200 grams Sour cream
50 grams sugar
300 milliliters Whipped cream
For the garnish
200 grams Dark couverture chocolate

Preparation steps


Preheat the oven to 180°C (approximately 350°F).

For the batter: Beat butter, 150 grams (approximately 5.3 ounces) of sugar and vanilla sugar until fluffy. Separate eggs. Beat yolks gradually into butter mixture. Combine cocoa, cornstarch and almonds, then fold into butter mixture. Beat egg whites with remaining sugar until stiff and carefully fold into batter. 


Line bottom of a pan with parchment paper. Pour batter into pan and bake for about 45 minutes. Cover with foil if cake begins to get too dark. Remove and let cool.

For the filling: Soak gelatine in plenty of cold water. Drain cherries well and mix with jam. Combine quark and sugar. Squeeze out gelatine and dissolve in a small pot over low heat. 


Combine 2 tablespoons of quark mixture and gelatin, then fold into remaining quark mixture. Beat cream until stiff and fold into quark mixture.

Cut cake once horizontally. Spread filling onto bottom layer, add cherries and top with top layer of cake.

For the garnish: Melt chocolate over a double boiler. Drizzle over cake and let cool. Slice and serve.
