Cherry Almond Florentines
Boil sugar, vanilla sugar, butter, honey and cream in a small saucepan, stirring constantly. Let caramelize and add candied fruit and flour. Stir in chopped almonds and remove from heat.
Preheat the oven to 180°C (approximately 350°F).
Spoon about cherry-sized mounds onto a baking sheet lined with parchment paper. Bake until golden brown, about 8-10 minutes. Remove and let cool on a wire rack.
Melt oil and chocolate over a double boiler. Dip florentines into chocolate and sprinkle with slivered almonds. Let set and serve.
