For the quark cream

Preparation steps

For the cherry compote: Remove the pits from the cherries and marinate in the kirsch for about 30 minutes.

Boil the wine, port, sugar and cinnamon over high heat until syrupy. Place the marinated cherries into the syrup and poach for 2-3 minutes, then remove from the heat.

For the quark cream: Mix together the quark, lemon juice, crème fraîche and powdered sugar, to taste. Refrigerate until ready to serve.

To serve, divide the quark cream into bowls and top with the cherry compote.
