Preparation steps

1.

Preheat the oven or grill to 400°F.

Prick the potatoes several times with a fork. Rub with oil and sprinkle with salt. Place on a baking tray and bake for 1 1/2-2 hours, depending on the size of the potatoes, until tender. If cooking on a grill wrap the potatoes in aluminum foil.

Heat 2 tablespoons oil in a frying pan and cook the onions for about 10 minutes, until soft.

Put the onions, most of the cheese and all the sour cream into a bowl.

Cut the baked potatoes in half and scoop out the insides into the onion mixture. Mash together with salt and pepper to taste and the milk.

Put the skins on a baking tray. Spoon the mixture into the potato skins and sprinkle the remaining cheese on top. Return to the oven/grill for a further 5-10 minutes, until the cheese has melted.
