Cheesy Puff Pastry Stars
- For the cheese stars
- 400 grams frozen Puff pastry dough
- 4 egg yolks
- 200 grams finely grated spicy Cheese (such as Gruyère, Gouda, Parmesan, etc.)
- freshly ground peppers

- Pastry flour (for rolling out)
- star Cookie cutter about 5 cm (approximately 2 inches) wide
Thaw the puff pastry and roll out onto a floured surface. Cut the puff pastry into two equal-sized sheets. Whisk 3 of the egg yolks until light and frothy and brush over one of the sheets of puff pastry. Sprinkle with the grated cheese, place the second puff pastry sheet on top and press lightly to secure. Cut the puff pastry into stars using a cookie cutter and place on a baking sheet lined with parchment paper.
Preheat the oven to 200°C (approximately 400°F). Whisk the remaining egg yolk with a bit of water and brush onto the puff pastry stars. Bake for 6-7 minutes, until golden brown.
