Preparation steps

Preheat the oven to 200°C (180° fan) 400°F gas 6.
2.
Prick the potatoes several times with a fork. Rub with oil and sprinkle with salt. Place on a baking tray and bake for 1 1/2-2 hours, depending on the size of the potatoes, until tender.

Heat 2 tablespoons oil in a frying pan and cook the onions for about 10 minutes, until soft.
4.
Put the onions, most of the cheese and all the creme fraiche into a bowl.
5.
Cut the baked potatoes in half and scoop out the insides into the onion mixture. Mash together with salt and pepper to taste and the milk.
6.
Put the skins on a baking tray. Spoon the mixture into the potato skins and sprinkle the remaining cheese on top. Return to the oven for a further 5-10 minutes, until the cheese has melted.
