Cheesy Asparagus Sandwich Bites
Rinse the asparagus, peel the bottom third and cut off woody ends. Boil thr asparagus in a large pot of salted water with the sugar for about 7 minutes, or until slightly al dente. Lift out of the water with a skimmer, shock under cold water, then pat dry and cut in half lengthwise.
Fry the sandwich bread in a skillet in hot butter until golden brown. Coat each slice with the ricotta on one side. Top half of the slices with the cheese, ham and asparagus. Lay a slice of bread on top of each and cut in half. Serve with toothpicks, if desired.
