Preparation steps

Crush the cookies and mix with the soft butter. Press into the base of a springform pan and chill.

Bloom the gelatin in cold water. Beat the cream cheese with the powdered sugar until smooth. Whip the cream. Squeeze any excess water from the gelatin and melt in a small saucepan along with the orange juice. Stir in 2-3 tablespoons cream cheese then mix into the main cream cheese mixture. Fold in the whipped cream then pour over the cookie base. Chill for at least 3 hours.

Rinse the berries and sprinkle over the chilled cake. Prepare the glaze according to package instructions with 250 ml (approximately 1 cup) water and the sugar. Drizzle evenly over the berries and chill for about 30 minutes, until set.

Run a knife along the edge of the springform pan and remove the ring. Carefully cut into pieces.
