For the base
250 grams almond cookie
125 grams melted butter
For the cheese cream
750 grams Quark
250 grams cream cheese
1 generous pinch Lemon peel
100 grams sugar
2 tablespoons Vanilla sugar
8 sheets gelatin (white)
100 milliliters Mango juice
200 milliliters Whipped cream
For the topping
3 sheets gelatin
250 milliliters Mango juice

1 ripe Mango

Preparation steps

For the base: crumble biscuits finely. Combine with melted butter and place into lined with baking paper springform pan, press down firmly and refrigerate. For the cream: soak gelatine in cold water. Combine quark with cream cheese, lemon zest, sugar and vanilla sugar. Warm up mango juice and dissolve squeezed gelatin in it. Add remaining juice and disolved gelatine to cream mixture. Add whipped cream. Spread cream mixture on cake base, smooth and refrigerate for about 1 hour. For the topping: soak gelatine in cold water. Heat half of mango juice and dissolve squeezed gelatin in it. Add remaining juice quickly. Gently pour over cake and refrigerate for at least 2 more hours.

Before serving, peel mango and pit. Cut pulp into slices. Decorate cake with mango slices. Loosen cake from springform pan and transfer to cake plate. Serve.
