Cheesecake with Fruit
- For the filling
- 8 sheets gelatin
- 400 grams cream cheese
- 125 grams sugar
- 1 packet Vanilla sugar
- 2 eggs
- 2 teaspoons Lemon peel
- 2 tablespoons lemon juice
- 300 grams Whipped cream
For the crust: Finely crush the cookies with a rolling pin and knead with the soft butter.
Line a springform pan with plastic wrap and evenly press the cookies into the pan. Chill for about 2 hours.
Soak the gelatin in cold water until soft, about 10 minutes.
For the filling: Beat the cream cheese with sugar and vanilla sugar. Gradually stir in the eggs and lemon juice until smooth. Stir in the juice.
Squeeze the excess water from the gelatin and dissolve in a small saucepan over low heat. Stir into the filling and chill for 30 minutes.
Beat the cream until stiff and fold into the filling. Spread the cream cheese over the crust and chill for about 4 hours.
To decorate: Rinse the strawberries, clean and cut into slices.
Drain the mandarin oranges. Whip the cream with the stabilizer until stiff.
Remove the cake from the pan and remove the plastic wrap. Spread 2/3 of the cream over the cake. Sprinkle with the ground pistachios. Transfer the remaining cream into a piping bag and decorate the border of the cake. Garnish with mandarin, strawberry slices, and chopped pistachios.
