1 Springform pan (26 cm ⌀)
200 grams Ladyfinger
125 softened butter
1 teaspoon grated Lemon peel
8 sheets white gelatin
600 grams Strawberries
2 tablespoons lemon juice
3 tablespoons Strawberry liqueur
100 grams sugar
400 grams cream cheese
250 grams Whipped cream
2 Star fruit (carambola)

Preparation steps

Crush ladyfingers and mix with butter and lemon zest. Line sprinform pan with the mixture.

Soak gelatine in cold water. Rinse and clean strawberries, halve or quarter, depending on size. Mash 300 grams of strawberries (approximately 10 ounces). Combine with lemon juice, liqueur, sugar and cream cheese, puree until smooth. Dissolve gelatin, dripping wet, in a small saucepan on low heat and mix with 3 tablespoons of strawberry cream, add remaining cream.

Beat heavy cream until stiff and fold into strawberry cream. Spread cream on cake base and smooth. Refrigerate for 3 hours. Decorate cake with remaining strawberries and carambola slices. Serve.
