Preparation steps

For the crust: Combine the flour, cocoa powder, salt and sugar in a large bowl and make a well in the center. Add the egg and about 50 ml (approximately 1/4 cup) of lukewarm water to the well and distribute the butter over the top. Mix with a pastry cutter or two forks until well combined. Quickly knead with hands to form a smooth dough. Form the dough into a ball, wrap with plastic wrap and refrigerate for 30 minutes.

Roll the dough out between 2 sheets of parchment paper and line the bottom of the springform pan with it.

For the filling: Beat the quark, sugar, cornstarch, eggs and lemon zest until smooth. Beat the heavy cream until stiff and fold into the quark mixture. Spread the filling into the prepared pan and bake in an oven preheated to 180°C (approximately 350°F) for 1 hour. Turn off the oven, crack the oven door open and leave the cake in the oven for 10 minutes, then remove from the oven and allow to cool.

Carefully remove the cheesecake from the springform pan and cut into slices. Top each slice with fresh blueberries and dust with powdered sugar.
