200 grams Multi-grain cracker
2 tablespoons cocoa powder
1 pinch cinnamon
70 grams butter

400 grams Mascarpone
200 grams Vanilla yogurt
2 tablespoons lemon juice
125 grams sugar
1 Vanilla bean (mark)
100 milliliters Whipped cream
100 grams Chocolate biscuit
For the garnish
70 grams Dark chocolate

Preparation steps

For the base: Crush the wholemeal cookies into small crumbs. Transfer to a bowl and add the cocoa powder and cinnamon. Melt the butter, stir into the crumb mixture until well combined and press onto the  bottom of a 9-inch springform pan.

For covering: In a bowl, stir together the mascarpone, vanilla yogurt, lemon juice, sugar and the vanilla. In a mixing bowl, whip the cream to stiff peaks and fold into the mascarpone mixture. Break the biscuits into large pieces. Spread some of the cream on the bottom of the springform. Scatter some biscuits over and continue layering until all the cream and biscuits have been used.  Refrigerate at least 3 hours.

For the garnish: To serve, melt the chocolate over a hot water bath and cool to room temperature. Break the chocolate biscuits into pieces and scatter them on the top of the cake. Drizzle with the melted chocolate and garnish with strawberries and mint.
