For the cheesecake
150 grams softened butter
200 grams sugar
4 eggs
1 packet vanilla pudding mix
750 grams Quark
250 grams cream cheese
2 tsps grated Orange peel
For the fruit filling
200 grams Cherries
300 grams Gooseberry
75 grams jam sugar
4 Tbsps Pine nuts (chopped)
100 milliliters Apple juice
1 Tbsp cornstarch
butter (for the pan)
3 Tbsps Pine nuts
2 Tbsps powdered sugar
mint (for garnish)

Preparation steps


For the fruit filling, rinse cherries and remove pits. Rinse gooseberries. Stir cornstarch with 2 tablespoons of apple juice until smooth and set aside. Mix fruit with remaining juice and sugar in a saucepan and bring to a boil. Stir in cornstarch and bring to a boil again. Mix in chopped pine nuts. Set aside and cool.


For the cheesecake, separate eggs and beat egg whites until stiff. Cream butter with sugar and egg yolks until creamy. Stir in vanilla pudding powder, quark, cream cheese and orange zest. Fold in egg whites. Pour half of cheesecake mixture into a greased springform pan. Spread fruit filling on top and smooth. Pour remaining cheesecake mixture on top and bake in a preheated oven at 200°C (approximately 400°F) for 50-60 minutes. After 40 minutes, remove cheesecake and sprinkle with pine nuts and powdered sugar. Once done, cool in pan and serve garnished with mint.
